Baked Potato / Sweet Potato / Yams

Medium sized potatoes are easier to cook than the very large ones.

Scrub the vegetables and dry them.

Prick in several places with a fork to prevent then bursting in the oven.

Preheated oven: gas mark 5 375°F 190°C

Baking time depends on the size of the vegetable, from 40 minutes to 80 minutes, until soft.

Serving suggestions:

Split and spread with garlic butter.

Grilled cheese - split the cooked hot potato in two and cover with grated cheese, return to the oven until the cheese has melted.

Fill with salad and a gluten free salad cream.

Split and serve with pickles or chutneys.

Potato Chips

It is not essential to peel the potatoes before cutting into chips.

If you do want chips without potato skin, scrub the skins clean before peeling potatoes. Deep fry the skins until golden brown to eat as a snack.

Yams should be boiled before cutting into chips.

Cook chips in a deep pan with a shallow layer of oil.

Always have a close fitting lid to hand in case of fire.

Do not allow the oil to get so hot that it produces smoke.

Boiled potato, sweet potato

These are more nutritious if cooked in their skins. Cooking times depend on the age and the size of the potato. Cover with water and boil for 10 to 20 minutes. Peeled potatoes are much more likely to break up in the pan.
