Liver and Bacon

Ingredients: to serve four

1 medium sized onion
1 lb / 450g liver
4 oz / 100g bacon
14 oz / 400g tinned tomato
4 fl oz / 125ml pure orange juice
pinch mixed herbs
salt to taste
fresh ground black pepper to taste

Instructions:

Chop the onions finely and fry in a little oil until translucent.

Cut the bacon into two inch pieces and add to the pan.

Cut the liver into ½ inch strips and add to the pan.

Fry for four minutes over a moderate heat, turning the liver and bacon constantly.

Add the tinned tomatoes, orange juice and mixed herbs.

Simmer gently for ten minutes before serving.

Take care not to overcook liver.
