My son is 7 yrs old, has celiac and is severely Autistic. I read a good rule when wondering what to eat when you have to be gluten free, "if it don't swim in the water or grow on trees don't eat it" try to eat like early man did fresh and natural, good luck all
Sence Andy has been gluten/casien free he doing much better semi verbal and much less agression

Leander: That's a good way to look at eating Gluten Free. I'm not sure where you live, or if you've checked into it already, but there are some gluten free support groups around which are really great at helping find foods that are 'safe'.
I live in the suburbs of Chicago, IL and our support is the Greater Chicago Celiac Sprue Association GC/CSA. This group has ALOT of children in it and has also incorporated a Kids Gang group which allows kids who need to be gluten-free for one reason or another to get together, have fun, eat like other kids do (only gluten free) and feel included. The parents also come and get together with the Gluten Free adults and share recipes, ideas, thoughts, etc.
You should check into it. one way is go online and search Celiac Sprue Association and it will show you locations all around the US and some abroad.

PS: If you live in the US, Check out the Gluten Free Delight website (www.glutenfreedelights.com) They freshly make products and ship them fresh to your door and are really really good. They have cookies, pies, hamburger buns, dinner rolls, pizza crusts, donuts, etc. I highly recommend them.

Both myself and my sister have to follow a gluten-free and milk free diet. We avoid all milk products. In cooking, we use olive oil as the fat and don't use any butter or margarine.
What we eat All fresh fruit and vegetables, dried peas and beans. All fresh meat and fish, eggs. Potato and rice. Olive oil, corn oil, lard Rice, easy cook rice, brown rice, ground rice, rice flour, pure rice noodles, pure rice pasta, wild rice. Maize, maize flour, cornflour(maize). Sorghum flour, teff flour, quinoa, buckwheat. Sweet chestnut puree and flour. Cream of tartar, bicarbonate of soda. All herbs, all fresh spices. Sago and tapioca. Agar, arrow root.

If anyone give me guidence on this GFCF diet because I have no idea what things my severly autistic son can and can not eat....thanks to the list i know of some of the things I can feed him.
What is the best bread for sandwich making?
Any information will be appricated!

It is very difficult to make a bread that can be cut and used to make sandwiches on this diet. Commercial manufacturers get round the problem by adding gums that stick the bread together, but these are not what I would regard as natural food ingredients.
Rice cakes made from puffed rice can be used to make a sandwich, but their texture is completely different from bread.
I eat a packed lunch several times a week and will often have cold potato salad, or cold cooked rice with dried fruit, plus a large slice of a GFCF fruit cake, and fresh fruit.
