I have an 8 year old niece has been recently diagnosed as having celiac. My own son's 8th birthday is next month and I would like to bake a cake for my niece so she may have a slice of cake in her party bag to take home, (and hopefully the family can enjoy too!). Can any one help

The easiest way would be to find a health food store to
purchase a pre-packaged gluten-free cake mix. Otherwise
you'll have to purchase many different flours to make a mix
plus buy xanthan gum(quite expensive) and other items you
would not normally have in your cupboard

I loathe the thought of packet mixes as they are always so processed. The following is a delicious cake and no-one realised at my son's birthday that it is gluten free. It is also quite a firm cake and therefore easy to carve if you wish to shape the cake into a novelty cake.
8 oz butter
8 oz caster sugar
8oz grated chocolate
4oz ground almonds
4 oz rice flour ( or plain flour if you don't need to be gluten free)
6 eggs (separated)
beat the butter and sugar to a cream and beat in the chocolate which has been gently melted. Add beaten egg yolks the flour and almonds. lastly fold in the whisked egg whited. Pour into a large round tin or two sandwich tins and bake in a moderate oven for 40 ish minutes or longer if in one tin.

Hi - Can you tell me what caster sugar is? Is it like our white ganulated sugar here in the US ? Do you use sweetened chocolate or baking choclate? Do you weigh your ingredients...or is 4 oz considered 1/2 cup?? Thanks for you help.

An egg free recipe for a cake You could try making shortbread type biscuits with different flavours - chocolate add cocoa, ginger, cinnamon. look at http//www.peter-thomson.co.uk/glutenfree/Shortbread.html
You can also add dried fruit such as sultanas or raisins into the mix.
This is a very rich sugar / butter mixture so a child should not be allowed to eat too much at one go

I was experimenting with my usual carrot cake recipe (Jamie Oliver's) and found that it was equally good substituting the plain flour with a gluten free sponge flour. I am aware that this does not always work, but it does for this recipe.
285 g unsalted butter, plus extra for greasing
285 g light brown soft sugar
5 large free range or organic eggs, separated
grated zest and juice of 1 orange
170 g SF flour or Gluten free sponge flour
1 slightly heaped tsp baking powder
115 g ground almonds
115 g shelled walnuts, chopped, plus extra to decorate
1 tsp heaped ground cinnamon
pinch of ground cloves
pinch of ground nutmeg
½ tsp ground ginger
285 g carrots, coarsely grated
pinch of sea salt
Icing:
225 g full fat cream cheese
85 g icing sugar
grated zest and juice of 1 orange.
Preheat oven to 180º C. Grease a 22cm square cake tin or 24.5cm round tin and line with baking paper. Beat the butter and sugar until pale and fluffy. (I use the Kenwood). Beat in the egg yolks, 1 at a time, and add the orange zest and juice. Stir in the sifted flour and baking powder, then add the almonds, walnuts, spices and carrots and mix well.
In a separate bowl, whisk the egg whites with a pinch of sea salt until stiff, then gently fold into the cake mixture, Scoop the mixture into the prepared cake tin and bake for about 50 minutes or until golden and risen. Let the cake cool in the tin for 10 minutes, then turn on to a rack and leave for at least an hour..
For the icing mix together cream cheese (I use Philadelphia) and icing sugar and orange juice to taste. Decorate with chopped walnuts.
In addition to the above Jamie Oliver adds 115 g mascarponi and the grated rind and juice of two limes instead of the juice and rind of one orange.

Caster sugar is fine grained white sugar - small grain size so it will go through a sifter.
Known as superfine sugar in the US
