IYes, I know we shouldn't but I have an English recipe for fruit cake that converted very well to being made without flour for a friend of mine who wanted a christmas cake. It is alcoholic but not dry, although I suspect you could substitute apple juice for sherry. The original recipe was for Huntsman's Cake from Elisabeth Aynton English Provincial Cooking. Its not a cheap cake but for a one off is great. It freezes well and I usually slice it before freezing but it can be cut when frozen, the alcohol stops it freezing hard. I suspect that it would work well using just dried apples and pears and apple juice or cider.
Cream the butter and the sugar. Add the egg yolks one at a time, beating well in. Add the flour, ground almonds, salt, currants, peel, cherries and almonds gradually, then pour in half the sherry. Fold in the stiffly beaten egg whites, and finally the sodium bicarbonate dissolved in the vinegar. Put the cake mixture into a greased and papered tin and cover with a piece of greaseproof paper. Place in a hot oven, 425 degrees F, 220 degrees C, gas mark 7. After 10 minutes lower the heat to 325 degrees F, 170 degrees C, Gas Mark 3, and bake for 2 hours.
When cooked and still very hot, pour over the remaining sherry, by spoonfuls, and leave the cake in the tin, covered with a cloth, until it is quite cold

Wedding Cake HELP

I have been gluten free for 8 years, and I just got engaged. My biggest dilemma with planning this wedding is what to do about the wedding cake?
I went to a local food fair of all GF products and located a bakery that does gluten free cakes, my problem - don't remember who they were, where they are at, etc. I contacted my local chapter but I'm not sure if they can help me.
I'm in the 'middle' age category where you don't see many people diagnosed with this disease (i was 25 when I was diagnosed). Has anyone had to deal with this??
My first thought was to have an Ice Cream Wedding Cake made, but I'm not sure how it will hold up.
Any suggestions????????

Gluten-free recipes for rich fruit cake using half rice flour and half fine maize flour are almost indistinguishable from those made using wheat flour.
I had a tiered cake, and made the top tier myself - gluten-free, the rest of the cake was ordinary wedding cake for guests made by a friend.
Make sure the person serving the cake knows to cut your slice from the top tier and then keep it safe for you for later.

Janet, I completely and totally understand how you feel. I am in the process of trying to figure out what to do about a cake myself. What have you decided to do? I know that a lot of times you freeze the cake before you ice it. My Mom and I are thinking we may need to order a mix (like Dowd and Rogers or something) and make the cake a month ahead of time, then have a baker come over to my house and decorate it - so I do not have to worry about cross contamination. Any input you may have might be helpful. Thanks

As a wedding cake is a special order, you might consider finding a Kosher bakery and asking if they can make you a non-gebrots passover wedding cake. On passover, Jews can't eat anything make from wheat, barley, rye, oats or spelt(those grains are called mezonos) or any other gluten-containing grain, except for matzah. Some passover cakes are made with ground up matzah (which of course contains gluten). But there are some Jews who won't even eat things made with this matzah meal so they make "non-gebrots" baked goods which are totally free of mezonos and consequently, gluten-free. Depending on the bakery (whether it's Ashkenazic or Sephardic) it may also be corn free and rice free. And they also know exactly how to make a dairy free (paerve) cake if caisen is a consern for you as well. Everything is watched really closely, as contamination is a religious concern (they have seperate equipment for passover cakes that never touches mezonos). So after this lengthy explaination, another option for you if you can't find a gluten-free bakery is to get a non-gebrots passover cake from a kosher bakery. Good luck and congratulations

Wedding Cake ReSOLVED!
Just wanted to give you an update (although late as it is) . My wedding was August 23 of 2003 and I had the top layer of my cake specialty made by a local baker which was gluten free. They were familiar with this condition (which shocked me) and were very very helpful. The bottom 2 layers were 'normal' wheat flour cakes, and the top layer was my special cake. No one knew but my family and the groom about the special cake.
We cut into the top layer as our 'first piece' feed eachother, etc. and my husband even ate it - he liked it! Basically it was just a flourless cake they made. It was a little crumbly but it worked out wonderfully!
The top layer was then packaged up for us to take home and the bottom 2 were sliced for the guests.
I live in the western suburbs of Chicago and the baker was in another suburb of Chicago. If anyone is in the vacinity and would like their information, please contact me indivudally at jbrads@acehardware.com and I'll be happy to supply you with their information.

The easiest way would be to find a health food store to
purchase a pre-packaged gluten-free cake mix. Otherwise
you'll have to purchase many different flours to make a mix
plus buy xanthan gum(quite expensive) and other items you
would not normally have in your cupboard

I loathe the thought of packet mixes as they are always so processed. The following is a delicious cake and no-one realised at my son's birthday that it is gluten free. It is also quite a firm cake and therefore easy to carve if you wish to shape the cake into a novelty cake.
8 oz butter
8 oz caster sugar
8oz grated chocolate
4oz ground almonds
4 oz rice flour ( or plain flour if you don't need to be gluten free)
6 eggs (separated)
beat the butter and sugar to a cream and beat in the chocolate which has been gently melted. Add beaten egg yolks the flour and almonds. lastly fold in the whisked egg whited. Pour into a large round tin or two sandwich tins and bake in a moderate oven for 40 ish minutes or longer if in one tin.

I am too searching for a gluten-free cake. My aunt suggested that I make a "normal" wheat cake perhaps a slab cake or similar for our guests and that I make a cheesecake for myself and a few other guests that can not have gluten flour.
Her comment was that as long as it had no crust or a crust of rice cookies vs the normal crust that it would be a nice change. She has celiac disease & i am allergic to wheat plus there is at least one other guest that will be able to eat gluten free product as well.
And she also suggested to serve the cake later so its not a huge focal piece and that way the majority of guests won't really be that focused on the "event" of the cake. More that they just snack on it between dances & drinks.
Our wedding is June 4/05 in Nova scotia, small town & not very ethnic so finding an alternative baker will be justifiably difficult. That's why the cheesecake idea may actually work in my situation. Just a thought--good luck & please consider posting whatever you decide--I'd love to see what your solution was

Hi - Can you tell me what caster sugar is? Is it like our white ganulated sugar here in the US ? Do you use sweetened chocolate or baking choclate? Do you weigh your ingredients...or is 4 oz considered 1/2 cup?? Thanks for you help.

Pancake day in England

Thanks so much for your pancake recipe. It was Shrove Tuesday in the UK yesterday and I managed to follow the recipe to the tee! My husband suffers from Coelaic Disease and has never had pancakes.. needless to say we were both tucking in with gusto!!
It's Valentines on Monday so I am going to bake him a scrummy cake!

An egg free recipe for a cake You could try making shortbread type biscuits with different flavours - chocolate add cocoa, ginger, cinnamon. look at http//www.peter-thomson.co.uk/glutenfree/Shortbread.html
You can also add dried fruit such as sultanas or raisins into the mix.
This is a very rich sugar / butter mixture so a child should not be allowed to eat too much at one go

Hi,
I noticed that you had all been discussing gluten free wedding cakes on this website. Although a little late (i.e 2 years down the line) that I have found your comments I thought I would just add a little note incase anybody searches for the same problem and finds this.
As a coeliac and dairy intolerant woman for the last 30 years I can make a gluten free and/or dairy free fruit cake for your wedding.
I live in the West Midlands in the U.K and would be able to drop it off within a 20-30 mile radius of Walsall.
If anybody is ever interested please feel free to contact me via email - handbaggirlie -at- aol.com - I can also make other cakes and party food (and I dont charge the earth, just understand how difficult it is to find this kind of food!!)

Heathers Christmas Cake Recipe

Hello, I am trying to organise Christmas baking. My husband was diagnosed a ceoliac earlier this year, although lots of things have had to change I would like to keep Christmas as normal as possible for him. I am going to follow the recipe for Heathers Christmas Cake. I was wondering if I bake the cake now, will it keep until Christmas as a cake made with normal flour would? Heather's Christmas Cake is a good keeping cake, so certainly bake it now for Christmas.
Incidentally, I have just been clearing out my store cupboard to make room for this seasons chutney, and found a Christmas pudding from last year at the back, still in excellent condition.

The plan for my wedding in June... I'm working with Polly's Cakes to create a safe solution for me. The main cake will be 'normal' but will be cut and frosted to look as if a piece of the cake has been cut out. Then my gluten cake will be cut and frosted to look as if it's that piece. My cake never touches the other cake, but it still fits in - I don't have to be the weird one who has a special cake (I don't know why that idea bothered me so much, but I've found celiac really brings out the neurosis in me). I was experimenting with my usual carrot cake recipe (Jamie Oliver's) and found that it was equally good substituting the plain flour with a gluten free sponge flour. I am aware that this does not always work, but it does for this recipe.
285 g unsalted butter, plus extra for greasing
285 g light brown soft sugar
5 large free range or organic eggs, separated
grated zest and juice of 1 orange
170 g SF flour or Gluten free sponge flour
1 slightly heaped tsp baking powder
115 g ground almonds
115 g shelled walnuts, chopped, plus extra to decorate
1 tsp heaped ground cinnamon
pinch of ground cloves
pinch of ground nutmeg
˝ tsp ground ginger
285 g carrots, coarsely grated
pinch of sea salt
Icing:
225 g full fat cream cheese
85 g icing sugar
grated zest and juice of 1 orange.
Preheat oven to 180ş C. Grease a 22cm square cake tin or 24.5cm round tin and line with baking paper. Beat the butter and sugar until pale and fluffy. (I use the Kenwood). Beat in the egg yolks, 1 at a time, and add the orange zest and juice. Stir in the sifted flour and baking powder, then add the almonds, walnuts, spices and carrots and mix well.
In a separate bowl, whisk the egg whites with a pinch of sea salt until stiff, then gently fold into the cake mixture, Scoop the mixture into the prepared cake tin and bake for about 50 minutes or until golden and risen. Let the cake cool in the tin for 10 minutes, then turn on to a rack and leave for at least an hour..
For the icing mix together cream cheese (I use Philadelphia) and icing sugar and orange juice to taste. Decorate with chopped walnuts.
In addition to the above Jamie Oliver adds 115 g mascarponi and the grated rind and juice of two limes instead of the juice and rind of one orange.

I am allergic to dairy, wheat, chocolate, potato (so no potato flour to replace the wheat) and can't stand dried fruit. I am getting married next year and for once in my life, everybody else is going to have to eat what I am eating rather than me have to have something which has half the ingredients missing! Planning the rest of the menu is fine, but I am really struggling with finding a cake. We are getting married in Scotland, on a tight budget, but as I live in London I can't make the cake myself as I won't be able to transport it...
Any ideas???

What a shame your wedding isn't in London. I run a small business from Primrose Hill making numerous cakes including 3 Wheat Free Cakes, I even got a Great Taste Award for my Wheat Free Chocolate Cake! I would love to have been able to help you. Shame. Hope you find someone.

Caster sugar is fine grained white sugar - small grain size so it will go through a sifter.

I am celiac as well as allergic to cane sugar. I do well with other natural sweetners(fructose, maple syrup, stevia, agave syrup, honey.). Does anyone have a suggestion for me?

I am not sure where you are based but if you are near to Birmingham then I could help with your gluten free wedding cake. This is one of the specialities of Amethyst Cakes.
Pre-heat the oven to 180C/355F (fan oven 160C/310F) or Gas Mark 4.
Cream the butter and sugar together with a folk, add the egg yolks (keeping the egg whites in a separate bowl for whisking later) then slowly add all the flour bit by bit mixing well with a wooden spoon, mixture will feel quite stiff.
Now add the tablespoon (or splash) of boiling water and the lemon juice, this will soften the mixture
Meanwhile, now whisk up the egg whites until mixture will stand in peaks,and add egg mixture to cake mixture and mix in well.
Place approx. 15 baking cases on a bun oven tray, putting approx. a dessertspoon of cake mixture in each baking case.
Place cakes in pre-heated oven for 15 – 20 mins until golden.
Place cakes on a rack to cool. Cakes are tasty and can be eaten plain or for butterfly cakes
Please note that this is the first time I have measured the ingredients, you may want to use a little less sugar or add another egg to make them lighter. I haven’t tried to make a Victoria sandwich cake yet. I got the idea for this recipe from an old magazine for a normal coffee & walnut cake, where they whisked the egg whites separate.
Gluten-free Flour - 4 ounces/113g (I use Doves Farm Gluten free plain flour but I am told Glutafin Pastry works well as it has less raising agents).
Butter (softened) 6 ounces/170g
Cornflour - 2 ounces /57g
Icing sugar - 2 ounces/57g
Caster sugar for dusting.
Method:
Pre-heat the oven to 180C/355F (fan oven 160C/310F) or Gas Mark 4.
Cream together the butter and sugar until nice and fluffy add the cornflour then finally the gluten free flour..
Mix together then finally kneed with your fingers until mixture comes away from the bowl…
Half the mixture in two and kneed onto 2 lightly greased round cake tins using your knuckles to spread shortbread mixture out… leave about a centimetre from the edge of tins to let shortbread expand,,, use your thumb and for-finger to make shortbread petticoat edge, prick all over with a fork to let the air out and put in oven and bake until golden
Once out the oven, leave for a few minutes to cool, then cut/mark with a knife then sprinkle the shortbread with caster suger.. don’t leave to cool for too long before cutting or shortbread will just crumble!!!
To get them off cake tins, turn onto a clean dish towel upside down, in your other hand hold a couple of pieces of doubled up kitchen roll to swap shortbread onto, place both pettiecoat tails on a wire rack to cool
