Greetings to people with celiac disease:
Below is a reply that I wrote to someone who inquired about including oats in the celiac disease diet. I am posting this reply to emphasize the fact that, while gluten-free oats probably are safe for MOST, but NOT ALL people with celiac disease to eat, each celiac disease person should consult with their physician and/or dietitian before doing so.
Best wishes, Tracy
Hi Paul -
Yes, we're in the process of setting up to do this (market gluten-free oats). We hope to have product available by the end of March, 2005.
We have a process whereby we are sure that there is no cross-contamination with wheat, barley, rye, etc. Unfortunately, it is going to be expensive to set this all up, so initial product costs will be high. However, we hope that after a first successful year we will be able to start dropping the price. We have not yet settled on a retail price.
Two notes of caution:
1) We have done an extensive review of the medical literature, and the vast majority of reports say that gluten-free oats should be OK for MOST but NOT ALL (my emphasis) celiac disease people to eat. Likewise, the U.S. National Institutes of Health June, 2004 Consensus Development Conference Statement on Celiac Disease ( http://consensus.nih.gov/cons/118/118celiacPDF.pdf ) states that "Oats appear to be safe for most people with celiac disease..." (p.6, paragraph 6).
2) I notice that your return email address is in Canada. Health Canada and CFIA, with whom we have had extensive consultation, tell us that in Canada our products cannot be labelled, sold, advertised, etc as "gluten-free" because of a Health Canada Regulation (FDR, B.24.018) prohibiting any product that contains oats to be marketed in any way as GF. Until this regulation is changed, which may take years, we and everybody else must abide by it.
I hope that this helps. If you have more specific questions drop a line and I'll try to respond.
Best wishes, Tracy

You don't say how old your brother is. He has to learn to check whether the food is safe or not, and think about what he can and cannot eat. If you sneak him some it may encourage him to eat other foods he shouldn't, and that might make him ill. If you are in the UK, you should be able to get a copy of the Gluten-free food and drink directory ( a liitle book) from www.coeliac.co.uk This will list all the chocolate products that are safe to eat. Then you need to agree with your parents what you are allowed to 'sneak' to your brother.

I just ran into this thread a few minutes ago. Has this product been fully developed? Is it available to the public? I am a home baker that bakes wheat free dairy free foods. Please send me an e-mail with an update on the product. Thanks, Jennifer Jarrell

You may want to check out www.glutenfreeoats.com . These oats have been certified gluten free ( testing below 3 ppm) by the Univ. of Nebraska's FARRP.org. The oats will not be available until after January 1, 2006 because the processing facility is still being built. If you have any questions you can e-mail the company through their web site.

Most Hershey's products are OK. I also know that most Cadbury products are gluten free as well. Just check for little ingredients that may be included in candy coatings and colorings (dextrin and carmel coloring contain gluten and should be watched for). Most soda is fine as long as it's clear soda. Dark sodas (and even Ginger Ale) contain carmel coloring which has gluten in it.

buying GF products in crete

A lot depends on where you are staying, and how much travelling around you plan to do. If you have a hire car and are close to Heraklion or Chania it is possible to get to a big supermarket, but otherwise you won't find specifically GF products in the shops.
So if you want GF bread and biscuits or cake, take that with you packed in your hold luggage, and in the original packaging.
I have not found it a problem eating out in Crete - but do make sure that someone in the restaurant speaks good English and understands the problem.
Self catering is straightforward as you can always cook rice or potato and a selection of fruit and vegetables are readily available.
I go out walking most days, and take a cold potato or rice salad for my lunch, with fruit and nuts and raisins.
Some airlines still serve meals - make sure you request a GF meal before the day of travel. (You won't always get it!)
have a good holiday

Gluten Free Sausage
Posted by Joanna
I live in Hertfordshire and we have just discovered a very pleasant butchers who produces organic gluten free sausage which are excellent. He freezes them separately so they are easy to use. We also asked him about cross contamination and he was happy to re-assure us that the gluten free sausage is always made first and the machine is thoroughly cleaned prior to the process being commenced
