A traditional butcher who handles the complete meat carcass will be cutting off the suet and disposing of it.
I buy a large lump, cut it into cubes and then freeze it until required ( not too long)

Natural suet can be obtained from a traditional butcher.
This is a solid lump of hard fat from round the kidneys of a beef animal.
It should be chopped fine while still cold from the fridge.

We have however got a suggestion that seems to work quite well according to our members
- Put a block of lard or vegetarian/vegan equivalent (for example White Flora) in the freezer until it is very cold but not frozen, then coarsely grate and sprinkle with gluten-free flour to separate the pieces.
We have had no complaints so far about this recipe so we suggest giving it a try and see how you go.

If you want suet to make your Xmas puddings it works just as well to use an equivalent amount of margerine. If you want to make dumplings , a similar taste experience is to top your stew with balls of scone mixture and bake in oven without covering.

I also have been trying to find a gluten free suet. Yesterday I went to "Gluten Free Foods Direct" tasting open day at North Duffield, Nr Selby, Yorkshire. They had a Community Foods Vegetable Suet -at- 99p. They also do mail order. Hope that is off help to those of you who have also been looking.

We make vegetable suet with Rice flour rather than wheat flour. We are BRC and in the process of going "gluten free" (i.e 20ppm) but at the monent our Rice Flour product can be bought from Community Foods who suppply a number of health food shops around London area.
If you let me know where you are based I can let you know your nearest supplier.
