Hi, I feel for you guys I really do! I am 25 and have endomoetriois, polysystic ovaries, IBs and am waiting for the results on celiacs. It is so depressing, that I am eating all the wrong foods have only stopped training 3 weeks ago and gained 3 kilos. I can't eat anything! Not even apples and it doesn't seem like there is much help ouit there on a a diet for all of the above. I say we all chip in and come up with one!

You may want to check out www.glutenfreeoats.com . These oats have been certified gluten free ( testing below 3 ppm) by the Univ. of Nebraska's FARRP.org. The oats will not be available until after January 1, 2006 because the processing facility is still being built. If you have any questions you can e-mail the company through their web site.

Hello to you all. There is another that is brewed in the UK. This is Nick Stafford's Hambledon Ales. I prefer it to Greens as it is a lower gravity (4.2\%) and bigger 500ml bottles.

A traditional butcher who handles the complete meat carcass will be cutting off the suet and disposing of it.
I buy a large lump, cut it into cubes and then freeze it until required ( not too long)

There is a gluten free beer festival held yearly, and next year brewers from around the world are turning up with casks of their brews. The French lager on ASDA GF list is a mistake- Coeliac UK say no ordinary beer is safe for coeliacs, only the special GF ones.
Stick to the GF beers (as named on CAMRA Chesterfield GF beer festival web site).

Brenda, if you are in UK join Coeliac UK ( Coeliac Society) -membership is free to all diagnosed coeliacs in UK- and look/post on the gluten free messageboard .

Greens ale tastes like stale dishwater to me!
However many coeliacs report being able to tolerate certain lagers, depending on quantity. Corona is often mentioned as OK, and I find I can tolerate it. Brahma is ok for me personally as long as no more than 4 bottles, Cobra Ok in 1 or 2 bottle quantities.
The absolute no-no is any beer containing wheat, since most of us seem to have a higher intolerence to wheat gluten. Therefore wheat or white beers are toxic! Also they are cloudy from deliberate wheat content!
It is a matter of debate of course as to whether we should risk low levels of gluten at all - and whether we can get away with some glutens better than others, e.g. oats rather than wheat. Research indicates we vary in this regard with some coiliacs able to tolerate oats and spelt, others having problems with even the rice varient of gluten (rice starch). I seem to be able to tolerate small amounts of barley gluten in beer and oat gluten in one particular "oat" ale. In food the levels are too high and make me ill. I guess its a careful try it and see, but please dont make yourselves ill on my suggestions!
I will not pretend to be an expert on this one or give medical advice, but perhaps the above will be of help to some people!
Incidentally in regard to Whisky - having done some research and corresponded with some experts including distillers the following might be helpful
Scottish whisky is either single malt or blended.
Blended whisky tends to contain wheat.
Blended whisky is more likely to have residual impurity, including wheat gluten.
Single malt contains only barley as a source and is always at least double distilled. Some are triple distilled (mainly low land).
In theory blended whisky is risky, single malt should be OK, and Laphroig in particular are adament their product is gluten free.
This only applies to Scottish Whisky, I have no info regarding Irish or US/Canadian
As a whisky buff and enthusiast, I have noticed blended makes me ill, single malt just makes me happy! So the information I gathered seems to be pretty accurate.

As I mentioned before - I have celiac. However I can make me a mixed drink of Barcardi Limon rum(one shot), Zima XXX(one bottle) and a diet sprite(half glass) and it does not affect me. Plus this is a great summer time drink!

vegetarian and gluten free

I have just been diagnosed with having Coeliacs. The idea of cutting out so much food that i love was bad enough, but thing is that Im also vegearian, as i have been since i was 10 (am 18 now). This isnt going to leave me with much choice. Any suggestions?

You must make sure that you get plenty of variety in your diet, and you don't eat the same things all the time.
I hope that you have learn't how to cook - because you will have to learn in order to get plenty of variety.
I hope also that you eat fish, eggs and dairy produce, otherwise you will have to think very carefully about keeping to the vegetarian aspect of your diet.
You can make a wide variety of meals from fresh vegetables, fresh fruit, rice, potato, sweetcorn / maize, sweet potato. Go out into the food supermarket and look at the range of fresh produce on the shelves.

Nigerian Guinness now available at Tesco.
If you've never tried this, then worth a try. I've been registered coelic for the last 4 years, and have become quite partial to this. As it's brewed from sorghun instead of wheat, and has a sufficiently low gluten content my dietician has confirmed it is ok to drink.
I actually prefer the roasted taste to that of Irish Guinness...

Further to my last mail, I think Sept 2006
Well we have achieved our aim, a gluten free pilsner beer! Our brewery team and lab have done the biz! As I explained when I first posted our target, our aim was to create a gluten free pilsner beer. Well, it’s beyond all my dreams. Though we have done our own lab checks, I'm waiting for two UK labs to confirm the results (GF). Our first tasting with a CAMRA judge has confirmed our flavour etc, but until all the i s are dotted we will not go public, but it tastes great, and though I wanted a beer, until I tasted it I would not have believed it! We have produced over 10k 33cl bottles. We shall be doing further tastings, and then we shall the be offering the results of out first mash at cost & shipping. We cannot ‘sell’ it as we have not defined our shelf life, but it’s anticipated as over 6 months. All I can add is that the guys at the brewery and lab have done me proud! To quote the taster
Overall impression much closer than before to a standard pilsner-clone
lager, i.e. it tastes like beer. Can still tell it's not made with barley,
but it's a lot less obvious. Definitely miles ahead of any other gluten-free
beer I've tasted so far.
So not bad, maybe we can improve it, but as my friend who had not (been able to digest a beer for 8 years said after the 3rd bottle, 'this is liquid heaven'!

Note that flour sold as chapati flour or chappatti flour is a fine wheat flour.
It is not gluten-free.
Use a mix of gram flour, rice flour and maize flour instead.

I have. been doing coeliac diet for my husband for 24 years now . at first very hard to get to grips with but if you stick to fresh food eg meat fish veg it not so bad there are more items in supermarkets now curry mixes pasta
sauces available I have flour and pizza bases on perscription plus pasta this helps . going out is diffuclt my husband dosent like to make a fuss so he sticks to steak or somthing plain if we go away i take packets of crackers home made bread rice cakes anthing that i get im handbag . we seem to ok but always looking for something different.my husband is healthy and never misses work but doesent eat the canteen food as they dont do awide variety of food .the coeliac society help with the food directory and monthly mag with recipes and advice

Food grade cellulose is made from a wide variety of plant material, but mostly from wood pulp.
Some companies do provide information on the source of the cellulose used in their products, but often no information is given.
There is no risk of gluten in cellulose from wood pulp, seaweed, or fungal culture.

Ben sent me a sample of his Gluten-free Pilsner Beer.
I thought that we would test it at our club party with regular beer drinkers who consider themselves to be a good judge of a pint. They were told that it was a bottled pilsner beer, but no more about it.
The verdict was extremely favourable, with the majority considering it to have an excellent flavour.
The testers didn't know it was a GF beer, so this is definitely not a second rate substitute. It is a good beer in its own right.

The tincture of St Johns Wort will be gluten-free.
There are no details of whether gluten may have been added as a filler to tablet form.
Note that anyone with allergy problems should seek advice from their doctor before taking this. In my opinion anyone needing a gluten-free diet should seek this advice.
St Johns Wort can cause sensitivity to sunlight and skin rash as well as interacting with other medicines.

I have been diagnoised jan 06 but i am still suffering, with running tummy and pain evry day i have been of work for nearley a year june.
i was very anemic and had total villi atrophy.
i am exprance leg and arm pain is any body else and extreme tiredness

If you are still experiencing severe symptoms after 12 weeks you need to go back to your doctor and seek further advice.
The villi should be recovering by now on a totally gluten-free diet.
Check your diet very carefully to make sure that you are not eating anything that may contain gluten.
In a small proportion of people with the coeliac condition, soya will also cause problems - this is well documented in the medical literature.
In an even smaller proportion of people any finely refined flour will cause problems. i.e whole grain rice is fine for them, but a fine rice flour made into bread causes them problems (leaky gut syndrome)
Any irritation to the gut increases the risk of cancer, but anything that you do to decrease that irritation reduces the risk of cancer again. The gut will heal itself, but it will still react to the substance that irritated it in the first place.

At the very last moment after 6 months (and three years of planning) our brewing partners who have been finding reasons for not signing their side of the contract have after providing many reasons, replied with the following:
‘(we) don't have capability for commercial production of Gluten Free Beer’
So there you have it! It will now not hit the shelves this summer and I'm gutted, but we are in discussions with other brewers and we will launch as soon as we can, I promise you. I'll update all those people who have signed up from our site. I'm sorry to disappoint you, but it was 'out of our hands', that decision!

Buckwheat flour is part of the rhubard family and has no no natural wheat, but in process can be contaminated, therefore you need to buy gluten free buckwheat flour. Mix buckwheat flour with gluten free white flour and mix with milk, but leave it quite thick. it should taste alot like chapatti.

Gluten Free Sausage

I live in Hertfordshire and we have just discovered a very pleasant butchers who produces organic gluten free sausage which are excellent. He freezes them separately so they are easy to use. We also asked him about cross contamination and he was happy to re-assure us that the gluten free sausage is always made first and the machine is thoroughly cleaned prior to the process being commenced

There are lots of gluten free options in Copenhagen - and in this case would suggest that you visit http://www.coeliaki.dk (Danish Coeliac Society). You might like to contact them directly and ask for details of restaurants/cafes/bars/products available etc.

So far the "Against the Grain" beer is the only gluten-free beer I have found that actually tastes like a beer. I do hope and pray they will after this cautious and successful testing of the market, bring out more GF beers into general circulation.
All the rest so far have been revoltingly sickly sweet. Like drinking rendered down treacle with an alcohol content off the scale, and to thoroughly add insult to injury extortionately priced .
My partner blinked when she saw me tip a pint of one of them away, asking "who are you and what have you done with my boyfriend" sort of thing.

Hi to the people asking about GF beer in the USA.
I was recently there visiting friends and found 3 beers (fairly) available.
One was out of stock in the (independent) shop i was in, but there was a great one called "Redbridge" - it's brewed by Anheuser Busch. Pretty damn tasty. This one was also available in Price Chopper.
There was another which I can't remember the name, it was a black label with a gold bat-like shape on it. I didn't like it as much, so thats probably why I don't remember the name. Go for Redbridge!
I was impressed by the availability and PRICE ($7.99 for 6 bottles) in the states (this was NY, upstate). I recommend try all your local liqour stores, you might be surprised what you find if you've not looked before.
A selection of beer is also available in Risottoria (including big bottles of Greens), a pizza place on Bleecker Street in NYC - yes the pizzas are also gluten free and awesome, and they also have pie, brownies, cake and bread sticks. Go. Now. (they have a website, i think...)

gluten free flours/chapattis

I notice i can use a lot of different flour alternatives and there are many manufacturers. Just a couple of questions which i would appreciate advice with.
1) Do i need to be careful about brands of these flour and are some manufacturers more likely to be contamination free. I bought various flours to do baking and now am not sure re milling process/contamination. Is this really an issue with rice flour, millet flour etc or should they be ok. im particularly thinking about asian foods and even things like rice noodles produced by companies who also produce wheat noodles. If any one has trused brands i would appreciate your comments.
2) Being a new coeliac, with a south asian diet, im not sure what to make chapattis/roti with, i read e using millet , juwar flour, anyone with any good recipes please help! Thanks v much

You should try the chia seed flour from nuchiafoods.com. It is certified gluten-free and is made in a facility that only produces gluten-free products. You can order online for only $6.89 for a 22oz bag. It can replace traditional wheat flour 1:1. Good luck

I read your e-mail about the gluten free breads not tasting like the breads you were used to. I am on a gluten free diet and have been for many years. I know what you mean about the difference in the taste. The best bread that I have found is Sami's bakery millet and flax seed bread. They also make wraps, hamburger buns, hot dog buns, and pizza crust. Hopefully that will help if you have not already tried it yet.

I have recently returned from a few days in Dorset and would strongly recommend Alf's Fish & Chip shop at 2 Lynch Road Weymouth 01305 783342 where I had cod and chips cooked in the chip oil, so no possibility of contamination. Absolutely marvellous. Mostly take-away but Alf has two tables for anyone eating in the shop

You can buy wonderful gluten free fish and chips in Hawes.North Yorkshire . Also cooked in separate fryer and a sitting in cafe with great staff. Good area to go for camping holidays or weekends away. There is also a gluten free freezer shop which supplies cakes,puddings, pastry,pork pies. steak pies and too many other goodies to mention

Just had absolutely delicious gluten free fish & chips from Youngers fish bar at 73 Caerphilly Road,Birchgrove,Cardiff, they cook gluten free fish &chips on the 1st and 3rd monday in the month,this was my first fish &chips for six years since being diagnosed with coeliac's and it was wonderful

I've tried half a batch of the 'Four Star' and 'Red Diesel' which are both gluten free beer recipes, and have been impressed.
I've PM'd the person who has put together the recipes, and he's had many attempts to pull together these recipes (being a coeliac himself).
Latest attempt is a brew of stout so I'll find out what that's like in a few days/weeks, buts it's certainly been fermenting well.
Don't be put off by the list of ingredients (tea bags, chocolate essence, bovril !!), it works, and I'm hooked...
Also, in response to a quiry earlier in this post, you can buy GFA from hambletons direct. Last lot I purchased just before Xmas 08 was £1.60 a botle, although they were predicting a price rise. Wirth buying in bulk at this price if you like it (the new recipe is much nicer that the last one).
For info, the ale recipes work out at around £15.00 for 20 litres (so around 75p a pint

My daughter had a bad case of gastro-enteritis some years ago,which left her with a 'leaky gut' and was advised, when eating afterwards to eat easily digested food, so she had pasta. Now, any food containing gluten causes bad reactions, bad stomach cramps,vomiting, diahoreah (I can't spell that!) and feeling rotten for days afterwards. If she avoids it she is fine, but sometimes if she wants to indulge (in profiteroles for example), she takes Buscopan first to help negate the reaction

Your daughter seems to be developing a very strong adverse reaction to gluten. Unfortunately the Buscopan may be simply masking the symptoms, and not protecting her from damage.
There is quite a serious risk of developing anaphalactic shock reaction to the food if she persists.
Your daughter should stick to a gluten-free diet.
Advice I have seen for leaky gut syndrome is to avoid all highly refined flour and food. Eat fresh meat, fish fruit and vegetables, eggs,
potato but not potato flour
rice but not rice flour, and brown rice rather than white rice.
The intention of this is to force the food to be properly digested and absorbed slowly, rather than undigested particles being able to be taken up by the gut wall.
Cornflour doesn't seem to cause the same problems as other flours as it forms a jelly with water much more easily and can be used to make sauces and thickeners

hi, hope all is well i'm new to this fourm and it looks really good, can eating gluten make people ahve mirgains i suffed from mirganes sence i was 15, and there got worse over the last 2-3 years last months evern worse i having mirganes once a month and it dont go for days and make me really ill, so can gluten free our mirgains?

Migraines can be caused by gluten in the diet.
I won't do any harm to follow a gluten-free diet for three months to see if your migraine symptoms change. Note that a completely gluten-free diet is essential to see if this is the cause. half measures won't do

My mother in law has just been told that she has coeliac disease - she cant tolerate gluten & wheat - she is trying to get used to it, but misses her chapatis obviously. The note above gave me some indictaion on how to make chapatis from buckwheat - but im still not sure. Is buckwheat still wheat though? And how can she make chapati's with this

I have been drinking cider lately but it is no substitute for beer is it? Imagine my joy on tasting Hambletons GFL. I have never been a lager drinker and to describe this wonderful drink as lager does it a grave injustice. GFL reminds me of Deuchars IPA but it is slightly stronger. It is so tasty that I am sure that lager drinkers won't like it. Also, I have had the whole Greens range now and have been impressed but GFL has that real British hoppy quality. I can't wait to get my hands on a GFA next.
I bought mine from ASDA in Portsmouth.
