Alkaline stomach
Posted by
I'm a staunch supporter of food combining, but find it difficult to convince others. One big argument I've come up against is how can the stomach possible be alkaline? Do you know the pH ranges in the stomach when starches are broken down vs. proteins? I understand saliva is alkaline and the process starts then, but I find it a good question

The stomach contents will always be on the acid side. However the stomach responds by producing a more acid environment for a meal high in protein.
The normal chemicals present in some cereal foods make insoluble complexes with some essential minerals which we obtain from protein foods - such as iron from meat.
The whole business of acid foods and alkaline foods which you will see in the work of some authors has nothing to do with food combining and the Hay diet. It is a missunderstanding of the scientific language used by Dr Howard Hay when he refers to foods high in the alkaline earth elements when doing food analysis. Dr Howard Hay was advocating eating plenty of foods rich in these elements - plenty of fresh fruit and vegetables.
